Apple and blueberry cake


A very healthy apple and blueberry cake for National Apple Day!

Ingredients
2x large apples
2 free range eggs
125ml olive oil
225g almond or gluten free flour
1 heaped teaspoon of baking powder
125g honey

For the topping
Blueberries either fresh or defrosted.

Preheat the oven to 180C.

Grate the apples and drain out the juice. Next mix the apple with all the other cake ingredients in a mixing bowl.
Pour the mixture into a greased baking tin and bake for approx 30 minutes or until a knife inserted into the cake comes out clean. Turn out and leave to cool.
When fully cooled top with the blueberries.
