Broccoli and spinach soup


This soup-er green soup with broccoli and spinach will warm your bones, jam packed full of nutrients and flavour I like to serve with toasted nuts or rice cakes with hummus for a healthy winter lunch.

You will need:
1 whole broccoli
1 red onion
3-4 cloves of garlic
4 handfuls spinach
Bouillon powder or homemade vegetable stock

First sauté the onions in a large pan with a little olive oil, after a few minutes add the garlic cloves crushed.
Add the remaining vegetables roughly chopped
Add hot bouillon or vegetable stock so that the liquid covers the vegetables
Cover with a lid and boil until the broccoli is tender but not stodgy (approx. 10 minutes).
Pour the soup into a blender and blend until a smooth consistency in achieved.
Serve immediately, or chill and reheat when needed.
