Cauliflower Curry


Cauliflower is often the overlooked member of the brassica family, however it is packed full of nutrients including health-promoting phytochemicals, a high level of anti-inflammatory compounds, as well as being an excellent source of vitamin C, vitamin K, folate, pantothenic acid, and vitamin B6.

You will need:
1 large cauliflower
1 red onion
3 garlic cloves
Handful of green beans
Coconut oil
1 tin Coconut milk
Fresh ginger
2 tsp curry powder
2 tsp turmeric
Fresh coriander

Melt the coconut oil in a pan then add the chopped onion, curry spices and turmeric. After a few minutes add the crushed garlic, chopped cauliflower and green beans then pour in the coconut milk. Grate in the fresh ginger (about an inch) and keep on a low heat until the cauliflower is cooked. Stir in some fresh coriander at the end of cooking and serve with brown rice or quinoa.
