Crispy curly kale

First Brassica recipe of the month is CRISPY CURLY KALE!

Kale is one of the most nutritious, versatile vegetables available, and it goes well with almost any meal from a side dish with spaghetti, tossed into a stir-fry, added to an omelette or alongside Sunday roast, making it a perfect addition to your diet.

A firm favourite is Crispy Curly Kale. Great as a snack or as a side:

  • Trim the stalks from the kale.
  • Wash the kale but make sure it is dry before cooking.
  • Spread evenly on a baking sheet and cover with olive oil.
  • Now add flavour. A sprinkle of salt is a must but you could also try curry powder, crushed garlic, paprika or chilli powder.
  • Cook for about 20mins at 150C. I like to shake the tray half way through baking.
