The second recipe of the month is…
Roast garlic cloves with skins on (at least 1/2 a bulb per person) with some olive oil, salt and pepper for about 20 minutes. Peel and pop into a pan.
Add 1 onion and any other vegetable you fancy parsnips, broccoli or mushrooms work particularly well
Add 2 cups of vegetable stock or Bouillon
Simmer for 15 minutes
Add a cup of oat milk
Add some mixed herbs or some fresh parsley
Blend together and serve
