Herby Garlic Cauliflower “couscous”


The fourth and last recipe of the month is…

Herby Garlic Cauliflower “couscous”

Ingredients
Salt and pepper to taste
1 Tbsp. Olive oil
3 cloves of Garlic
1 cauliflower
Fresh herbs
Crushed walnuts (optional)

  • Break down cauliflower and remove large stems from florets.
  • Place florets in food processor and process until cauliflower resembles couscous, or chop into pieces as small as possible.
  • Chop onion and garlic. Saute in olive oil – add onions to pan first, cook until softened, add garlic and saute a minute more.
  • Remove from heat and transfer to small bowl, reserving oil in pan.
  • Add cauliflower to oil in pan with a splash of water and cook for 10- 15 mins
  • Add onions and garlic back in pan (along with half a cup of walnuts if liked) and quickly toss with cauliflower
  • Add fresh herbs parsley, coriander or mint all work well add salt and pepper to taste and transfer to serving bowl.
